Monotub - Strong start but odd smell present

I have to small monotubs setup and they seem to be going strong as far as colonization. However I opened them up today and noticed an off smell, somewhat like plastic. The mycelium seems to be quite strong. I also notice a little pooling of brownish liquid on the tops, which I've read could be mycelial metabolites. This is my first monotub test, so I dont know what to expect. 

I am attaching a photo of each tub. Only one has the brownish water. Below is a description of my methods. 

 

Any advice on the smell or pooling of brown liquid would be appreciated. 

 

-Wheat berry grain spawn jars (with some coffee added) were fully colonized. I have since started more jars from the originals with no signs of contamination. Pressure cooker sterilized. 

-Coco substrate, boiling water on top to hydrate. 

-Spawn to substrate ratio was 1:2

-Monotubs were colonized for 10 days with micropore tape over 2 inch holes.

Those tubs look great!!! What size tubs are you using there I've been considering switching to a mini mono style

Casing layer brother! Peat moss, oyster shells, lime, little coffee grounds. You will get solid flushes if you case that. Patience is our hardest part, case and have Patience...

Garsh, thanks for the kind words fellas! I really had no idea how they should look as this is my first monotub grow. The mycelium has been pretty epic. I've incubated it at 80 deg F. Also one different thing I did, which may sound weird is this: I added dry unused coffee grounds to the grains pre-sterilization. One thing to think about in doing this is the moisture level of the grains and how the dry grounds might affect it. 

 

Will add the casing layer since you guys suggest it.

 

Damn, growing mushrooms is fun! 

 

 

Thanks for the advice on the casing layer. I've added it.

 

What temp do you fruit at? I've got one tub at 70 deg F and one at 80.

These are 27 Qt. So not exactly mini, but smaller than I see others using.

Was this 2 or 3 quarts of spawn for 27 quart tote?

Here are some updated photos after adding casing layer. I still notice a smell, but cant decide what it smells like. It definately doesnt smell as mushroomy as I expected.

Cubes don't smell like the mushrooms at the store.

They have their own distinct smell.
